Cheesesoup

INGREDIENTS for 4 people:
250 grams No. 4 Spicy Stale
700 millilitres of vegetable stock
250 millilitres of whipped cream
1 garlic clove
100 millilitres of white wine
1 leek
Salt and pepper

Preparation:
Cut the leeks into rings and grate the No. 4 Spicy Stales. Squeeze the garlic over a pan and fill the pan with the vegetable stock. Stir in the whipped cream and leek rings and let the soup boil gently for about 15 minutes. Mash the leeks with a hand blender in the pan or a blender. Stir the grated cheese into the soup and let it melt. Season with salt and pepper. Serve the soup warm.
